How to make white coconut chutney?

My brother is very particular about food. And dosa with this white coconut chutney is his favorite. He is very particular of the taste of such a simple chutney that my mom makes it in a very very authentic way. She is very particular of the timing of adding green chillies and water.

I used to feel what is there so much about chutney, just grind all together and done. But later on after tasting different varieties from different places, I found mom's chutney is the best. The flavour of ginger and curry leaves are perfect.

After wedding, I realised that Veeran is also fond of this coconut chutney. Lucky that I learnt it from my mom. I would like to start my cooking blog with the easiest / uncomplicated recipe ever to make the perfect white coconut chutney.

I feel the fresher the ingredients of any dish, the tastier it is! So to make any coconut chutney, you have to use freshly broken coconut. Discard the water or you can drink it, it is very healthy. I usually give it to my kids. And they love it.

Grate the coconut using a coconut grater. You will get a table top one or permanent slab fixture or one that can be used on floor.

Put the grated coconut in a mixie jar, add a small piece of ginger and salt. Grind it once without water. One the coconut breaks down into small pieces, add some water and grind it to fine paste. Once the mixture consistency is perfect add green chillies and grind it only once. This should just grind the chillies and not the seeds inside. Dont run the mixie again. Otheriwise, it will spoil the taste.

Now remove it to a bowl and add required water.

Heat oil in a small pan and add mustard seeds, red chilly and curry leaves. Let it splatter and add the tempering to the chutney. This is it. Have it with crispy hot yummy dosas :-).
